Cantabrian anchovies, traditionally fished, they have a distinctly taste and flavour, and all are carefully selected. The level of maturation is established at a minimum of 10 months, and every fillet is cleansed by hand, eliminating every possible thorn in order to obtain a high-quality product ready to eat.
